Rice and beans is a staple dish in Caribbean dining. Delicious paired with Jerk chicken or a hot pepper curry.

Ingredients

    • 300g Laila Long Grain Rice
    • 1 can Laila Red Kidney Beans
    • 3 spring onions, chopped
    • 120ml olive oil
    • 60ml apple cider vinegar
    • 1 tbsp Dijon mustard
    • 1 tsp Laila Cumin Powder
    • 1 tsp garlic, freshly minced
    • Salt and black pepper, to taste

Method

    • Cook rice according to package instructions and allow to cool.
    • In a small bowl, whisk together oil, vinegar, Dijon mustard, cumin powder and garlic until well blended.
    • Season the dressing with salt and vinegar as per taste.
  • Drain and rinse the kidney beans.
  • In a medium bowl, combine rice, kidney beans and spring onions. Add dressing to the desired amount and toss to moisten.
  • Serve immediately or cover and chill ahead of time.
